Irish Red

A smooth Irish Ale with malty cola notes, best enjoyed with burgers, beef pies, and pub food.


ABV – 5%
Ideal Temp – 6-8ºC 

Glass – Straight-walled tumbler

  • Profile
    Our Irish Red pours a reddish-orange/brown, topped off with a wispy, thin white head. Expect caramel, nut, and bread aromas on the nose and a light, creamy mouthfeel. On the palette, this 5% ale opens with sweet malty notes reminiscent of cola, and a light earthiness from the hops. The roasted barley delivers the experience of a drying finish alongside a light nuttiness.

    Background
    Before he co-founded Nonsuch, our Head Brewer, Mark Borowski was winning home-brew awards with this Irish Red recipe. Lucky for us all, he’s kept the tradition going by brewing this every March.

gose

A splash of citrus, salty, and sour notes best enjoyed with seafood and sunshine.


ABV – 4.7%
Ideal Temp – 6-8ºC 

Glass – Tulip

  • Profile

    At 4.7 ABV, our Gose opens with rich grain, citrus, and salt notes on the nose with a pleasant tart aroma. On the palate, expect citrus and lemon with a smooth graininess coupled with a nice saltiness before a tart, soft, drying, lightly salty finish.

    While some beers linger tenderly on the tongue, retelling their stories in rich, malty, boozy, whispers… others slip out silently, conjuring a thirst as they make room for what's next. In the case of our newest release, the finish is short and sour. The lemony-citrus profile delivers a tart mouthfeel as the salinity dries the finish and creates a salivating effect.

    Food Pairing

    We suggest pairing this beer with fish and seafood.

    Background

    Those familiar with the style would probably care to know our Gose is true to the traditional German process and was brought to a boil ~ but not continuously boiled ~ leaving more proteins and nutrients intact and in turn, a fuller body and flavour.

strawberry kÖlsch

A crisp German ale with dry fruit notes best enjoyed with pastries.


ABV – 5.3%
Ideal Temp – 6-8ºC

    If you haven't tried a Kölsch before, there is no better time to enjoy the uniquely refreshing profile of this German ale, brewed like a lager. Our Strawberry Kölsch is aged on 100kg of strawberries, delivering a smooth and gentle fruity thirst-quenching taste of spring.

belgian strong

An award-winning sweet and savoury ale best enjoyed with sausages, roasted root veggies, and beef.


ABV – 8%
Ideal Temp – 7-9ºC

  • Profile

    This full-bodied ale features a deep copper/amber appearance below a modest light tan head. Expect caramel, and toast aromas with fruit esters on the nose. A rich mouthfeel delivers a medley of caramel and light sweetness on the palate before a drying finish.

    About this Style

    Belgian Strong is more of a catchall category rather than a specific style of beer with a detailed history. Although many strong, darker beers have been documented, there is no clear lineage from these older brews to today’s Belgian Strong. Most versions are unique in character reflecting characteristics of individual breweries, produced in limited quantities, and often highly sought-after.

old ale x

An award-winning rich and dark delicacy best enjoyed with stinky cheeses and crackling fires


ABV – 10%

  • Story

    What’s the X in Old Ale X for?⁣

    Nine years ago, our head brewer Mark brewed the first batch of this beer in honour of the birth of his youngest son Alexander – hence the name Ale X (Alex).⁣

    ⁣From that initial batch, Mark set aside a bottle in his cellar as a gift to Alexander on his 18th birthday, (assuming Mark has the willpower to keep it corked.)⁣

    ⁣The second reason for the X is the 10% ABV Mark designed into the recipe, allowing the beer to be cellared (similar to wine). Old Ale X is designed to evolve in flavour and appreciate over time in your cellar (up to seven years and counting).

    We also add live yeast and fermentable sugars into the bottles right before packaging, a process known as bottle conditioning which removes air from the inside of the bottle as the yeast consumes the sugars and produce carbon dioxide.⁣
