Our sous chef will set up an oyster bar, shuck, dress, & plate to order. This is really fun if you have oyster lovers & it adds a great experience for guests. Everyone loves a fresh oyster!
Cocktail bar
$500 setup & development fee
Cocktails charged separately
Outline 3 cocktail ideas, and Brett, our in Bar Manager, will develop them into craft cocktails. You get to name them too, this is a great option if you have specific tastes or want a fun signature cocktail. If you don't opt into the cocktail bar, our regular cocktail offerings will be available for you.
Late Night Menu
$500 setup & Development fee
Food charged separately at Prix fixe
Customize your own à la carte late night menu. This could be a Focaccia Sandwich Bar, Poutine Bar, Appetizer Platter, or anything else you could imagine. Work with our chef to bring your Late Night Menu dreams to life.
Special Menu Item
$100 development fee
Food orders charged separately
If you want the kitchen to develop a specific item, for example a special version of our burger or a dish you like/want available to your guests.
Special Bar Item
$250 sourcing fee

If you want us to bring in a specific item, like your favourite wine or a specific non-alc option. No corkage applies.
Customize Your Experience
Speakers & Mic
$115
This includes 2 Bose L1 speakers & a wireless microphone. Great if you're planning on doing speeches! If you hire a DJ who has their own speakers & mic you are more than welcome to use that instead!
Candles
$50
Use our candles & votives. We have one candle on each table, plus extra to scatter around the taproom.
Cake Plating
$2.00/per Person
If you would like our kitchen team to plate outside dessert for you.
Dance Floor
$100
Our event staff will clear out the Taproom of chairs and tables to make room for a dance floor.
Consumable Vendor Fee
$300
If you want to bring in an outside vendor to serve food or beverages, like a coffee stand or hot dog cart. All outside vendors must be approved by the Nonsuch Event Coordinator.
Furniture Rearrangement
$100
Make space in the Taproom or Saison Room for a vendor to set up, like a Photo Booth or live band. All vendors and furniture rearrangement must be approved by the Nonsuch Event Coordinator.
Stay at The Mere
$350
Nonsuch will arrange a stay at The Mere hotel, walking distance down the street from us, 333 Waterfront Drive.
Brew a Beer
$1500
Come to our brewery and spend the day with our head brewer, Mark, to brew a beer especially for your event.
